The Perfect Grind Size and Fresh Grinding Matters

I’m not a coffee snob, but when I’m taking the time to do something, I always figure I might as well do it right! And when it comes to coffee, dialing in the most ideal grind size can really make a difference in the taste of your coffee. And brewing with a pour-over system like the VSSL Nest or an AeroPress Go, grind size is key to unlocking the best flavors. Choosing the right grind size to aim for with my Java G45 or G25 ensures balanced extraction, but there's an equally crucial factor: grinding your beans just before brewing. Here's why grind size and freshness matter, and how a portable grinder like the VSSL Java makes all the difference, especially when you're on the go.

Grind Size for Pour Over and AeroPress Go

Pour Over (VSSL Nest)

For pour-over brewing, a medium-fine grind (like the texture of table sugar) is ideal. This grind allows the water to flow through the grounds at just the right rate—fast enough to avoid over-extraction (which leads to bitterness) but slow enough to extract all the delicate flavors and aromas. With the VSSL Nest or any pour-over device, controlling water flow and extraction time is essential for achieving that clean, crisp coffee with a bright flavor profile.

AeroPress Go

The AeroPress Go is a versatile brewing method, and the grind size depends on the brewing style:

  • For a short brew time (1-2 minutes), a fine grind (similar to table salt) works best.
  • For a longer brew time (3-4 minutes), a medium grind (like sand) is ideal.

The AeroPress is forgiving and adaptable, but getting the grind size right can enhance your cup by bringing out the best flavors—whether you're aiming for a smooth espresso-style shot or a more robust, full-bodied brew.

Why Grinding Fresh is Essential

Freshly ground coffee is the key to flavor. Once coffee is ground, it begins to lose its freshness almost immediately, as exposure to air causes the aromatic compounds to break down. Grinding just before brewing helps preserve these volatile oils and delicate flavors, ensuring that you experience the full complexity and depth of your coffee.  When you're on the road or in the great outdoors, having the ability to grind fresh becomes even more important. Pre-ground coffee loses much of its flavor over time, leading to a flat, stale cup—exactly what you want to avoid when enjoying coffee in the wilderness.
